For this month’s Master Series I wanted to discuss Figaro by Firex which is the newest evolution of our pressurized braising technology and design. With 30 years of experience, Firex is the global inspiration to all other brands in this sector. Figaro is similar to its predecessor Betterpan which I have spoke about for the past several years. With this new generation of smart braising pan you will see that we have evolved the controller to be even more user friendly than our V_1 controllers but also offer deeper connectivity. This can be connected through Open Kitchen to the InvoQ by Blodgett for seamless preparation and cooking process when more than one piece of equipment is required. We have also developed multi-zone cooking in this platform that can be configured into vertical or horizontal zones.
